I heard it strips the water of some vital trace minerals etc is this true?

Yes that's correct. So you need to remineralize it if you want to use it as your main source of drinking water. Google it, I think it's not hard to do. But didn't really look into it yet.

My use case would be cooking and I would probably just keep drinking glass bottled natural mineral water

Maybe infuse the water with shilajit it's got just about every trace mineral there is and some electrolytes possibly
